Cheesy Bacon Zucchini Bake Recipe
Zucchini is available year round, and there are hundreds of ways to use it. This Cheezy Bacon Zucchini Bake is a great way to serve this wonderful vegetable. Not only is it quick to put together, but it freezes well. This vegetable/egg dish can be served as a side dish with grilled meat and poultry, as a light lunch or supper with a small salad, or a delicious brunch dish.

This egg bake has healthy ingredients, including zucchini, cottage cheese, and onion. Cheese and crisp bacon complement the flavor of the zucchini and the combination is a winner. Since it makes a large casserole, it’s great for crowds and gatherings. If you don’t need to serve a crowd, wrap tightly and freeze for up to a month. The casserole can be served warm or at room temperature.

8 ounces bacon, chopped

1 large onion, chopped

4 cups finely grated zucchini, (packed)
2 cups cottage cheese
2 cups grated sharp cheddar cheese
1 1/2 cups self-rising flour
1/2 teaspoon freshly ground black pepper

12 eggs

  1. Preheat oven to 350°.
  2. Spray a glass 9" x 13" glass baking dish with non-stick spray.
  3. Cook the bacon in a large skillet until crisp.
  4. Remove the bacon from the skillet and set aside to drain.
  5. Pour all except one tablespoon of the bacon fat from the pan.
  6. Add the onion and stir-fry over medium heat until softened.
  7. Mix the onion with the zucchini, cottage cheese, cheddar cheese, and flour; stir in the bacon.
  8. Mix the eggs into the mixture and stir until well-combined.
  9. Pour the mixture into the prepared baking dish.
  10. Bake 60-75 minutes or until a knife inserted in the center comes out clean.
  11. Remove from the oven and let sit 10 minutes before cutting into squares.
